- 2 large onions, chopped
- 5 cloves garlic, chopped
- 1 piece (1/2-inch size) fresh root ginger, chopped
- 3/4 tablespoon red chili powder
- 1/2 tablespoon ground turmeric
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1/2 pound stewing beef, cut into 1-1 1/2-inch cubes
- Salt, to taste
- 3 tablespoons oil
- 3 green chillies, slit lengthways
- Red chillies, to garnish
Place half the onions, the garlic cloves and chopped ginger in a food processor or blender and grind to a fine paste. Add the ground spices to this paste and combine well.
Smear the cubed beef with roughly half the paste and sprinkle with salt. Leave to marinate for 10-15 minutes. Set the remaining paste aside.
Heat half the oil in a large, heavy-based pan and add the remaining chopped onions and the beef. Cook, stirring, for about five minutes. Remove from the pan with a slotted spoon and set aside.
Add the remaining oil to the pan and stir-fry the green chillies with the remaining paste for 5-6 minutes over a medium heat.Return the beef and onions to the pan with about 1/2 cup of water.
Cook over a high heat for 3-4 minutes. Add salt and simmer for a further 10 minutes, stirring occasionally and adding more water if necessary.
